Last night I made a delicious, spicy vegetable stew with chickpeas, sweet potato and mushrooms. Was super easy and rather delicious. I based it on the recipe out of the Honestly Healthy cookbook but added a few other ingredients, including a bit of fresh chilli and coriander to add a bit of a twist.
